Yummy Recipes

Ok, I have been a slacking blogger the past few weeks, I admit it.....well, I will try to not let it happen again, and here are some fun fun recipes courtesy of Sweetwater to tempt your tastebuds in the coming holiday months.....

The first one is Oatmeal Spice Cake
from Country Fair Cookbook

Oatmeal Spice Cake

1 cup quick cooking oats 1 tsp. baking soda
1/2 cup butter 1 cup brown sugar, firmly packed
1 1/2 cup boiling water 1 tsp. cinnamon
1 cup suger 1/2 tsp. allspice

1 1/2 cup flour 1/2 tsp. nutmeg

1/2 tsp. salt 2 eggs

Combine oats, butter and boiling water in bowl. Cool, combine together flour, sugar, baking soda, cinnamon, allspice, nutmeg and salt. Add eggs to mixture; beat well. Add dry ingredients and brown sugar to oat mixture, beat at medium speed 2 minutes. Pour batter into greased 13x9x2 baking pan. Bake at 350 degrees 30-35 minutes until cake is done. Serve with a spoonful of coolwhip on top.

and the other recipe is for

Jingle Jammin Bars

1 cup flour
1 cup powdered sugar

1 cup ground walnuts

1/2 cup butter or margerine, softened
2/3 cup favorite preserves or jam

Heat over to 375 degrees. Grease bottom and sides of 8x8x2 or 9x9x2 pan. Mix all ingredients except preserves until crumbly. Press 2/3 of crumb mixture into pan. Spread preserves, then sprinkle remaining crumb mixture over top, pressing lightly.
Bake 20-25 minutes or until light golden brown. Let cool approximately one hour.
